Matcha Muffins

They have a nice color, don't they? These protein-rich matcha muffins get their green hue from the powerful powder you might know as 'matcha.' It has become quite popular in the Netherlands in recent years, but it has been used in countries like China and Japan for a long time.

And rightfully so because matcha is exceptionally rich in antioxidants, contributing to overall body health.

Healthy Matcha Muffins

Besides its potential health benefits, matcha has even more to offer. It's said to boost energy and concentration, has a detoxifying effect on the body, and supports heart health. Quite impressive, isn't it?

It's not a bad idea to incorporate this potent green powder into various dishes. However, you should enjoy its distinctive taste. Give them a try!

Ingredients (for 12 muffins)

  • 200 grams of oats
  • 2 scoops of Orangefit Protein vanilla
  • 1 tablespoon of ground flaxseed
  • 2 ripe bananas
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • 2 teaspoons of matcha powder
  • A pinch of salt
  • 200 ml of plant-based milk (such as unsweetened almond milk)
  • Optional: sliced almonds
  • Optional: 1 teaspoon of agave syrup

Instructions

1. Preheat the oven to 200 degrees.

2. Add 3 tablespoons of water to the ground flaxseed and let it sit for 10 minutes.

3. Mash the bananas until they're smooth. 

4. Mix all the dry ingredients together.

5. Then, blend the plant-based milk, banana, and soaked flaxseed together on high speed for 30 seconds.

6. Combine all the ingredients and mix well.

7. If needed, grease the muffin molds with some coconut oil.

8. Pour the batter into the molds, filling them about 3/4 full.

9. Optionally, sprinkle sliced almonds on top.

10. Place the matcha muffins in the oven for 15 minutes.

11. Allow them to cool for a bit after baking before removing them from the molds. Tip: Store the muffins in an airtight container in the refrigerator for a few days
