Healthy Christmas Cookies

The month of December is known for its coziness, but especially for all the goodies. These protein-rich Christmas cookies fit perfectly with this theme!

Make these cookies to serve when you have guests over or for yourself while you enjoy a movie on the couch.

With this basic recipe, you can also get creative after the holidays. Add your favorite spices or press a nut (like an almond) into the cookies before they go into the oven.

Shall we get started quickly with these delicious protein-rich Christmas cookies? 

Ingredients (for 10-12 cookies)

  • 130 grams of oat flour
  • 110 grams of coconut oil
  • 1 scoop of Orangefit Vanilla Protein
  • 1 1/2 tbsp of agave syrup
  • 2 tbsp of ground flaxseed (mixed with 4 tbsp of water)
  • 100 grams of dark chocolate
  • ½ tsp of baking soda
  • ¼ tsp of baking powder
  • 1 tsp of cinnamon
  • Pinch of salt

Tip: Optionally, add 2 drops of vanilla extract to the batter. This will enhance the flavor!

Instructions

  1. Preheat the oven to 200 degrees.

  2. Let the ground flaxseed soak in 4 tbsp of water for 10 minutes.

  3. Mix all the dry ingredients together.

  4. Mix the (solid) coconut oil with the agave syrup until well combined. Now add the soaked flaxseed mixture.

  5. Mix the dry ingredients by hand into the coconut oil mixture until you have a coarse batter. Shape it into a ball.

  6. Cover the batter and let it chill in the fridge for 15 minutes.

  7. Roll out the dough and use a cookie cutter to make 10 to 12 cookies (about 1 cm thick).

  8. Bake the cookies for about 10 to 12 minutes in the oven.

  9. Allow the cookies to cool completely.

  10. Optional: dip the cookies halfway into (melted) chocolate over a double boiler and let it cool so the chocolate hardens.

Tip: Be careful as the cookies can break easily.
