Blueberry oat bars

Ingredients for 10 bars

  • 125 grams of oat flour (tip: grind regular oats into flour)
  • 100 grams of oats
  • 1 1/2 scoops of Orangefit Protein vanilla
  • 50 grams of coconut blossom sugar
  • 50 ml of agave syrup
  • 1 teaspoon of cinnamon
  • ¼ teaspoon of baking powder
  • 6 teaspoons of vegan butter
  • 2 teaspoons of lemon juice
  • Optional: 1 teaspoon of vanilla extract
  • 100 grams of fresh blueberries
  • 200 grams of frozen blueberries/red berries
  • 1 teaspoon of cornstarch
  • Pinch of salt

Instructions

  1. Preheat the oven to 160 degrees.
  2. Line a baking tray (such as a small brownie tray) with parchment paper and set aside.
  3. Mix the ingredients that will form the bottom layer of the blueberry bars: oat flour, oats, Orangefit Protein, coconut blossom sugar, cinnamon, baking powder, and a pinch of salt.
  4. Then add the melted butter and agave syrup to the mixture. Gently knead with your hands until all the ingredients are well combined.
  5. Spread ¾ of this "dough" over the parchment paper and distribute it evenly on the bottom.
  6. Use your hands to gently press down the crust.
  7. Next, add the blueberries/red berries to a saucepan and heat over medium-high heat. Add a small splash of water and the lemon juice, then sprinkle in the cornstarch.
  8. Let it thaw and simmer gently over medium heat while stirring regularly. Use a spoon or fork to crush some of the berries, creating a liquid blueberry sauce.
  9. Allow this mixture to simmer gently for a few minutes to thicken the sauce.
  10. Then, spoon the sauce on top of the oatmeal crust and spread it evenly.
  11. Crumble the remaining oatmeal "dough" over the blueberry sauce.
  12. Place the baking tray in the oven for about 25-30 minutes.
  13. Allow it to cool completely, then lift the parchment paper out of the baking tray. This will make it easier to cut the blueberry oatmeal bars.
