Zucchini soup with green juice

Ingredients (for 4 bowls)

  • 2 zucchinis
  • 1 onion
  • 2 cloves of garlic
  • 2 vegetable bouillon cubes
  • 100 ml plant-based cream
  • 2 scoops of green juice
  • Olive oil or coconut oil
  • Optional: two handfuls of croutons


  1. Dice the onion, finely chop the garlic, and cube the zucchinis.
  2. Heat 1 tbsp of oil in a soup pot. Sauté the onion and garlic for a few minutes over medium-high heat.
  3. Add the zucchinis once the onion becomes translucent. Stir everything well and cook for another 5 minutes.
  4. Add a liter of water and the bouillon cubes, bring to a boil, and let it simmer gently for 15-20 minutes.
  5. Blend with an immersion blender until smooth. Then, add the plant-based cream and the scoops of green juice. Stir everything well.
  6. Taste the soup and season with salt and pepper if needed.
  7. Divide into bowls. Enjoy your meal!
