Tomato soup with green juice

Tomato soup is a true Dutch classic. You can heat up a can of Unox, but it's much tastier to make it yourself. And also much healthier. Especially when you add Orangefit's green juice. This way, you'll get a significant portion of your daily vitamin needs right away! 

Ingredients (for 4 servings)

  • 1 kilogram of tomatoes
  • 1 onion
  • 2 cloves of garlic
  • 1 small can of tomato paste
  • 1 vegetable bouillon cube
  • 100 ml of plant-based cream
  • 2 scoops of green juice
  • Olive oil or coconut oil

Instructions

  1. Dice the onion, finely chop the garlic, and cut the tomatoes into wedges.
  2. Heat 1 tablespoon of oil in a soup pot. Sauté the onion and garlic for a few minutes over medium-high heat.
  3. Add the tomatoes and tomato paste when the onion becomes translucent. Stir everything together and cook for another 5 minutes.
  4. Add 750 ml of water and the bouillon cube. Bring it to a boil. Then, reduce the heat and let it simmer gently for 5 minutes.
  5. Use an immersion blender to puree the soup until smooth, and let it simmer for a few more minutes. Then, add the plant-based cream and the scoops of green juice. Stir everything well.
  6. Taste the soup and season with salt and pepper if needed.
  7. Serve in bowls. Enjoy!
