Blueberry pancakes

19 January 2024|Lunch

Ingredients (for 6 pancakes)

  • 1 ripe banana (mashed)
  • 150 grams (frozen) blueberries
  • 150 grams oat flour
  • 200 ml unsweetened oat or almond milk
  • 100 ml water
  • 1 or 2 scoops of Orangefit Protein vanilla or banana
  • 1 tbsp chia seeds (+ 4 tbsp water)
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • Coconut oil for frying

  1. Let the chia seeds soak in lukewarm water for about 10 minutes.
  2. If necessary, pulverize the oatmeal into flour.
  3. Combine all the dry ingredients and mix them together. Mash the banana and add it to the dry ingredients along with the plant-based milk, soaked chia seeds, and water.
  4. Use a fork to mix all the ingredients until a thick pancake batter forms.
  5. Carefully fold in the blueberries.
  6. Melt some coconut oil in a non-stick frying pan over medium heat.
  7. Scoop the batter into the pan and cook the pancakes for about 5-7 minutes on each side. Flip them when the batter on the top side of the pancake is dry.
  8. Tip: If the batter becomes too dry, it's because the oats are absorbing the moisture. Just add some extra water to make it easier to scoop the batter into the pan.
  9. The pancakes are ready when they have a nice golden brown color on both sides.
  10. Ready to serve!
